Carrabba’s Italian Grill had a problem: it had grown from three restaurants to more than 200 — and its business plan required taking that to 500 in the next 3 years. Yet, the more they grew, they less the founders and brand stewards felt authenticity in the brand. How could they profitably grow and scale a brand that was built on family recipes and scratch kitchens? How could they maintain a core of authenticity and uniqueness while scaling the brand both domestically and internationally?
